Grate 3 large potatoes and soak in cold water for at least 30 minutes or up to several hours, usually with the skin on, unless they are Russet potatoes or similar. Drain the potatoes and squeeze out as much water as possible. Combine with the egg, flour, and salt. Mix well and fry in a pan with very hot oil until golden in several batches. Turn over and fry the other side. Place on paper towel to drain.
