Boiled Artichokes

Cut off the thorns with shears and rinse well, including between the leaves as much as possible.

Place heads in a pot of cold water with a little salt and a little lemon juice. cover the pot and bring to a boil. Simmer on low for about 1-2 hours. Done when the heads nearly fall apart from lifting them.

For a dip, mix mayonnaise with ketchup to the desired shade of pink (more mayo than ketchup).
