The mix
7 c. wheat flour
4 c. white flour
2.5 c. other flour (I like ground oats, ground rice, potato flakes, etc. - easier with my wheat grinder to do this than for most people - could just use more wheat or white)
1 c. powered milk
1/2 c. wheat gluten
2/3 c. white sugar
1 Tb. cinnamon
1 Tb. salt
Divide into 5 bags of 3 cups mix each.
To bake
1 bag mix
1 c. water
2 Tb. molasses
1 Tb. active dry yeast
1 Tb. butter
add a bit of extra flour/water as needed for right consistancy
Kneed, let rise, punch down, put in pan, let rise again, bake at 350°F for 35 minutes.
I generally use my old breadmaker to do the kneeding and first rise, then put in a breadpan in a slightly warm oven for the second rise, then bake. Total time is about 2-3 hours depending on rise times.
