Chewy Chocolate (Chocolate Chip) Cookies

6 oz choc chips (1 cup)
1 stick butter
1 c sugar (180 grams superfine sugar)
more sugar
2 eggs
2 c flour (260g all purpose flour)
1/4 t salt
1/2 t ea. powder and soda
Melt chips in double boiler, set aside to cool a bit. Mix sugar and butter well, add eggs, add chocolate, mix very well. Add vanilla if desired. Add dry ingredients, mix well. (Optional: fold in remaining 6 oz of 12-oz bag of chips to make Chewy Chocolate Chocolate Chip Cookies, those itty-bitty M&M's are nice too). Roll into 1" balls and roll in a bowl of sugar (turbinado sugar works well for the coating sugar). Place about 2" apart on greased cookie sheet. 350 for 12min. Done when they crack on top, they can burn easily, so turn to 325 if you don't trust your oven. Cool on a wire rack. Store airtight, but they won't last that long.
