I am always grateful when Arrillaga Family Dining Commons has so many excellent vegetable options - and especially some that do not involve any tofu! They had such a great array from fresh steamed broccoli to marinated mushrooms on the salad bar. The baked/roasted squash was delicious as were the sauteed mushrooms. I wish that there had been more of the latter because I feel bad that I ate so many! The eggplant parmesan was also wonderful! And, compared to at the other dining halls, the Arrillaga version seems to be the healthiest. I asked and apparently, the eggplant is baked! So, instead of being doused in oil or covered in bread, the eggplant seems to just be soft and delicious, and it was particularly nicely flavored with spices.
