The students will be research subjects, but, as long as each student signs a consent form, no further review or approval is needed.

This is not an appropriate course of action.

Any project that requires an informed consent by participants MUST be reviewed and approved by the appropriate IRB Panel. The Panel must review and approve the consent form before prospective subjects are asked whether or not they wish to participate.

However, the assumption that a consent is needed in this case may, or may not, be correct. As an educational study, this project may be approved for an exempt review, in which case you may be able to proceed as planned without further approvals.
